Try Bridie’s loaf at home

Our simple ingredients for one generous Dutch oven loaf. This is a draft method; we’ll refine it after our next bake.

What you’ll need

  • 500 g strong white bread flour
  • 80 g natural Greek yoghurt
  • 2 tsp fast-action yeast
  • 2 tsp crushed sea salt
  • 2 tsp raw cane sugar
  • 280 ml water

Allergens: Contains wheat (gluten) and milk (yoghurt).

How we make it

  1. Mix the ingredients into a dough and knead or fold until combined.
  2. Leave to rise, giving the dough a few gentle stretch-and-folds as it develops.
  3. Shape the loaf and let it prove until ready to bake.
  4. Preheat a fan oven to 210°C with the Dutch oven inside.
  5. Carefully transfer the loaf into the hot pot; bake covered for 25 minutes, then uncovered for a further 15 minutes.
  6. Cool on a rack before slicing. Enjoy!

Hot cast iron can burn: an adult should handle the Dutch oven. Proving times vary with room temperature.

Baked at home · With care

Good food, made thoughtfully

We clean equipment and work surfaces before use, wash hands at the appropriate steps, and take food handling seriously. Every loaf is made in our home kitchen, not a commercial bakery.
